- Chop garlic cloves and onion, place in bowl. Optional: cover with plastic wrap and refrigerate overnight so their ready for the morning..
- Trim fat from roast. Salt and pepper both sides generously. Optional: place in zip lock bag and refrigerate overnight..
- Heat 2 tbsp olive oil in frying pan over medium heat. Once hot, put onions and garlic in. Stir occasionally..
