Ingredients

  1. You need of Pasta.
  2. It's of Pancetta (or bacon).
  3. You need of egg + 1 yolk.
  4. You need of grated parmesan.
  5. It's of Salt.
  6. You need of Pepper.
  7. You need of garlic (optional).

Pasta Carbonara method

  1. Bring heavily salted water to boil and throw in pasta.
  2. Add sliced pancetta/bacon to cold pan on medium heat until enough fat is rendered.
  3. Add optional crushed garlic. If your pancetta/bacon isn’t cured, season with pepper.
  4. Mix eggs with parmesan cheese in a separate cup. Season mix with salt + pepper.
  5. When pasta is ready (al dente), turn off all heat and add pasta to pancetta/bacon pan, along with some pasta water. Mix to emulsify..
