  2. You need of tomato paste.
  3. You need of chicken broth.
  4. You need of water.
  5. Prepare of chicken breasts (medium/large).
  6. Prepare of black beans.
  7. Prepare of white hominy.
  8. You need of garlic cloves.
  9. You need of olive oil, extra virgin.
  10. Prepare of chili powder.
  11. Prepare of smoked paprika.
  12. Prepare of onion powder.
  13. You need of dried oregano.
  14. Prepare of salt and pepper.
  15. Prepare of fresh cilantro.
  16. You need of cheddar cheese.

Chicken Tomato Soup method

  1. Heat up pot on stove. (Medium/low heat) Pour in 1 tablespoon of of olive oil.
  2. Season chicken breasts with salt/pepper to taste and cook in pot.
  3. When chicken is cooked, take out of pot and shred the chicken with 2 forks, or cut into small cubes..
  4. Mince/roughly chop up garlic. Add the chicken back into the same pot as before, and add the chopped garlic in with the chicken..
  5. (If you dont have fresh garlic, you can add garlic powder in later).
  6. Add in the 28 ounces of tomato sauce. Stir..
  7. Add in 1/2 can of tomato paste. Stir..
  8. Add in the can of chicken broth and 2 cups of water.
  9. Add in the chili powder, oregano, smoked paprika, onion powder, and 2 tsp. garlic powder (if you didnt add in fresh garlic in before, or, if you just really like garlic).
  10. Drain the beans and hominy and add into the pot..
  11. Add in the 1/4 cup of cheese.
  12. Chop up the fresh cilantro and add into the pot. If you dont have fresh cilantro you can add 1 tablespoon of dried cilantro to substitute. (It will look like a lot but thats okay).
  13. Taste. Add salt and pepper as needed..
