Quinoa "Fried Rice" To make Quinoa "Fried Rice" you need 12 ingredients and just 8 steps. Here is how you achieve that.

Ingredients

  1. You need of quinoa rinsed and drained.
  2. It's of zucchini, diced.
  3. Prepare of sliced mushrooms.
  4. It's of frozen veggie mix (corn,peas,carrots etc).
  5. You need of eggs.
  6. You need of soya sauce.
  7. Prepare of fish sauce (optional).
  8. It's of chopped parsley (optional).
  9. It's of olive oil, extra virgin.
  10. It's of small onion, diced small.
  11. You need of garlic cloves, minced.
  12. Prepare of salt and pepper.

Quinoa "Fried Rice" step by step

  1. In a pot, cook quinoa for about 15-20 min or until cooked and add the frozen veggies in the last 5 min of cooking time and set aside..
  2. While quinoa is cooking, heat a non stick pan and cook eggs (scrambled) remove from pan and set aside.
  3. Add oil to pan and cook garlic and onions until translucent..
  4. Add your mushrooms to the pan, cook for another 3 min..
  5. Then add your zucchini, and stir fry another 3 min (I like my zucchini still crisp so I don't usually cook it for long, but you can cook longer if you'd like).
  6. Add your cooked quinoa and mixed veggies to the pan, mix. . Then add the scrambled eggs into the pan..
  7. Add your soya sauce, fish sauce (if using) and salt and pepper to taste. Mix all together. Let sit for 5 min for everything to mingle then serve 😊.
  8. Sprinkle with parsley to garnish (optional).
