- cut up sausage and brown in a large pot.
- heat 1 T. oil and cook onion, garlic, bellpepper, and celery til they wilt or turn soft.
- now add flour and cook for about 5-7 minutes more or til flour turns the color you like, stirring constantly.
- add 1 cup of uncooked rice and all the chicken broth , now bring it to a rolling boil and stir again.
- once its boiling good turn temperature down to low and cover.
- after 30 minutes uncover, stir and serve.
- its important here to NOT open the lid for at least 30 minutes, as it will stop the steaming and rice will not cook through.
