Ingredients
- It's 1 lb of andouille sausage, sliced 1/4in thick.
- Prepare 6 of scallions.
- It's 1 of large green pepper.
- You need 2 of ribs celery, chopped.
- You need 1 1/2 cups of long grain rice.
- You need 1/2 tsp of dried thyme.
- It's 1 lb of raw shrimp, peeled and deveined.
- You need of Black pepper.
- It's 1 of large or 2 medium cloves garlic.
- It's 3 cups of chicken broth.
Shrimp and Sausage Jambalaya instructions
- In a large heavy saucepan cook sausage until lightly browned, remove with slotted spoon and reserve.
- Chop scallions reserving dark green part for garnish, add to sauce pan with green pepper, celery, and garlic, cook over moderate heat 5 minutes stirring often.
- Add broth, rice, thyme, and reserves sausage, bring to boil then reduce to simmer and cover for 10min.
- Stir in shrimp and pepper, cover and cook another 10mins until shrimp are just done and rice is tender.
