Ingredients

  1. It's 1 lb of andouille sausage, sliced 1/4in thick.
  2. Prepare 6 of scallions.
  3. It's 1 of large green pepper.
  4. You need 2 of ribs celery, chopped.
  5. You need 1 1/2 cups of long grain rice.
  6. You need 1/2 tsp of dried thyme.
  7. It's 1 lb of raw shrimp, peeled and deveined.
  8. You need of Black pepper.
  9. It's 1 of large or 2 medium cloves garlic.
  10. It's 3 cups of chicken broth.

Shrimp and Sausage Jambalaya instructions

  1. In a large heavy saucepan cook sausage until lightly browned, remove with slotted spoon and reserve.
  2. Chop scallions reserving dark green part for garnish, add to sauce pan with green pepper, celery, and garlic, cook over moderate heat 5 minutes stirring often.
  3. Add broth, rice, thyme, and reserves sausage, bring to boil then reduce to simmer and cover for 10min.
  4. Stir in shrimp and pepper, cover and cook another 10mins until shrimp are just done and rice is tender.
