The combo of sausage, chicken, and shrimp with Creole seasoning and rice is always a winner in my book. This was very similar to my usual recipe I use for jambalaya. - Combine seasonings….set aside.
- Melt butter in 2 quart pan, brown smoked meat, then add chicken and cook until chicken is brown..
- Stir in 1/2 of the seasonings and 1/2 of the chopped vegetables..
- Cook veggies until tender (5-8 minutes)..
- Add tomato sauce - cook for 1 minute..
- Add remaining seasoning (as desired. it can get spicy), veggies and diced tomatoes.
- Stir in stock and rice. Pour into ungresed 8x8 baking pan. Do not cover and back 1 hour at 350 degrees..
